GF Protein Packed Tuna Boats

Ingredients:

  • 1 can of tuna (I love Wildplanet)
  • 1 diced red pepper
  • 2 diced carrots (or 5 babies)
  • 1-2 diced celery stalks
  • 1-2 diced dill pickles
  • 1 tablespoon of mayo or greek yogurt (I love Kewpie)
  • 1 tsp of yellow mustard
  • 1 tablespoon dill pickle juice
  • Juice of 1 lemon
  • Salt & pepper to taste
  • romaine or bib lettuce (or half cucumbers &  peppers work well too!)

Directions:

 whisk mayo, mustard, pickle juice & lemon juice together

drain and rinse tuna, add to bowl with the dressing

add all diced veggies

add all diced veggies

mix and add salt & pepper to taste (and extra pickle juice!)

 add tuna mixture to lettuce “boats” and enjoy!
