Ingredients:
- 1 can of tuna (I love Wildplanet)
- 1 diced red pepper
- 2 diced carrots (or 5 babies)
- 1-2 diced celery stalks
- 1-2 diced dill pickles
- 1 tablespoon of mayo or greek yogurt (I love Kewpie)
- 1 tsp of yellow mustard
- 1 tablespoon dill pickle juice
- Juice of 1 lemon
- Salt & pepper to taste
- romaine or bib lettuce (or half cucumbers & peppers work well too!)
Directions:
whisk mayo, mustard, pickle juice & lemon juice together
drain and rinse tuna, add to bowl with the dressing
add all diced veggies
add all diced veggies
mix and add salt & pepper to taste (and extra pickle juice!)
add tuna mixture to lettuce “boats” and enjoy!
